1 Preheat the oven to 180°C (350°F/Gas 4). Grease six 160 ml (5¼ fl oz) mini heart-shaped tins.

2 Combine the plain flour, self-raising flour and ground almonds in a large bowl. Make a well in the centre.

3 Put the butter, sugar, pulp and vanilla extract in a saucepan. Stir over low heat until the butter has melted and the mixture is smooth.

4 Whisk the butter mixture into the dry ingredients. Whisk in the eggs until smooth.

5 Pour the mixture into the tins. Drop the raspberries on top, pushing them just below the surface.

6 Bake for 25 minutes, or until lightly golden. Set aside for 10 minutes, then turn out onto a wire rack to cool. Dust with icing sugar to serve.
